Freezing food is a common habit that allows you to save time, extend the shelf life of products and reduce waste. However, experts warn that not all foods react well to sub-zero temperatures, and dairy products are among the most affected. Products such as milk, cream and cheese can undergo significant changes in flavor, texture and how they are used in cooking.
Dairy products contain a combination of water and fat that does not always withstand low temperatures. During freezing, the emulsion that keeps the fat evenly distributed can break down, causing visible changes in the food. As a result, after thawing, lumps frequently appear, along with changes in consistency and a less pleasant texture.
Not all cheeses react the same way to freezing. Harder and aged varieties, such as parmesan or cheddar, usually remain safe to consume, but may become drier and more crumbly. Fresh or creamy cheeses, such as ricotta, cottage or brie, suffer greater impact due to their high water content, which promotes the formation of ice crystals and results in grainy textures after thawing.
In addition to changes in texture and flavor, there is also the problem of food expansion during freezing, which can cause packaging to burst and leaks. Experts recommend using resistant containers with headspace to accommodate this expansion, and suggest that proper refrigeration is the safest option for preserving the original characteristics of dairy products.
