From a plantation of just three hectares, dedicated exclusively to fine cocoa production, comes the bean elected the world's best for two consecutive years. The municipality responsible for this exceptional production is Medicilândia, in Pará, considered Brazil's national cocoa capital.
Miriam Federicci and her husband Leomar Vieira are responsible for cultivating approximately 350 trees of the winning variety, called Alvorada 01. This variety is recognized for its floral and earthy notes, which preserve almost the pure taste of the bean in the final product.
According to Miriam, the characteristic that most attracts chocolatiers is the absence of astringency. She explained that with this bean, chocolate maintains the authentic flavor of cocoa, which is exactly what chocolate manufacturers are looking for.
The cocoa farmer presented this production during Expocacau, held in Ilhéus, Bahia, last week.
