Octopus folar with samphire brings Ria Formosa flavors to FATACIL

An octopus folar with samphire inspired by the flavors and traditions of Fuzeta and Ria Formosa will be presented on Sunday, August 30, at FATACIL in Lagoa. The initiative is by the Associação KlubeSol and the Confraria Marinha da Ria Formosa, and the official presentation of the "Octopus Folar from Ria Formosa with Samphire" will take place at the Municipal Fair and Exhibition Park in Lagoa, as part of the program of the last day of the Handicraft, Tourism, Agriculture, Trade and Industry Fair of Lagoa.
The octopus is presented as an emblematic product of local fishing and part of the gastronomic identity of the fishing community of Fuzeta. Samphire, also known as the "green salt" of Ria Formosa, is a plant that grows naturally in saline zones and has been used in different contemporary kitchen proposals. The recipe seeks to combine traditional techniques with a current approach, using octopus and the salty flavor of samphire to reinterpret the usual format of the folar.
The presentation at FATACIL aims to give greater visibility to the product and affirm local products as elements of differentiation of Algarve gastronomy. The organization states that it is not just presenting a folar, but rather bringing to the fair "a story: the story of Fuzeta, of Ria Formosa, of our fishermen, of our salt pans and of a community that believes that tradition can continue to evolve."
The Associação KlubeSol develops projects in the areas of culture, community, sport, sustainability and valorization of natural and cultural heritage, with a particular connection to Fuzeta, the municipality of Olhão and Ria Formosa. The initiative also seeks to bring together associations, confrarias, producers and the community, using gastronomic heritage as an instrument for territorial valorization, sustainability and local development.
Inspirado nos sabores e nas tradições da Fuzeta e da Ria Formosa, o folar de polvo com salicórnia será apresentado este domingo, 30 de agosto, na FATACIL, em Lagoa, numa iniciativa da Associação KlubeSol e da Confraria Marinha da Ria Formosa.
A apresentação oficial do “Folar de Polvo da Ria Formosa com Salicórnia” terá lugar no Parque Municipal de Feiras e Exposições de Lagoa e integra a programação do último dia da Feira de Artesanato, Turismo, Agricultura, Comércio e Indústria de Lagoa.
A proposta gastronómica foi desenvolvida pela Associação KlubeSol e procura levar para fora da comunidade de origem dois produtos associados ao território: o polvo da Fuzeta e a salicórnia da Ria Formosa.
Polvo da Fuzeta encontra o “sal verde” da ria
O polvo é apresentado pela organização como um produto emblemático da pesca local e uma parte da identidade gastronómica da comunidade piscatória da Fuzeta.
Já a salicórnia, também conhecida como o “sal verde” da Ria Formosa, é uma planta que cresce naturalmente em zonas salinas e que tem vindo a ser utilizada em diferentes propostas de cozinha contemporânea.
A receita procura combinar técnicas tradicionais com uma abordagem atual, recorrendo ao polvo e ao sabor salgado da salicórnia para reinterpretar o formato habitual do folar.
“Não estamos apenas a apresentar um folar. Estamos a levar para a FATACIL uma história: a história da Fuzeta, da Ria Formosa, dos nossos pescadores, das nossas salinas e de uma comunidade que acredita que a tradição pode continuar a evoluir”, refere a organização.
Produto pretende divulgar património gastronómico
A apresentação na FATACIL pretende dar maior visibilidade ao Folar de Polvo da Fuzeta e afirmar os produtos locais como elementos de diferenciação da gastronomia algarvia.
A iniciativa procura ainda aproximar associações, confrarias, produtores e comunidade, utilizando o património gastronómico como instrumento de valorização territorial, sustentabilidade e desenvolvimento local.
“Acreditamos que uma terra deve ser capaz de contar a sua história através dos seus produtos, das suas pessoas e das suas tradições. Este folar é uma forma de levar a Fuzeta connosco e de mostrar ao Algarve aquilo que temos para oferecer”, afirma a Associação KlubeSol.
A associação desenvolve projetos nas áreas da cultura, comunidade, desporto, sustentabilidade e valorização do património natural e cultural, com particular ligação à Fuzeta, ao concelho de Olhão e à Ria Formosa.
