Raw, cooked or with sauces: how to make kale healthier? Study has the answer

A study conducted by researchers at the University of Missouri, in the United States, discovered a simple way to increase the body's absorption of nutrients from kale: combining it with olive oil, mayonnaise, or oil-based sauces.

The research was led by Professor Ruojie Vanessa Zhang, from the Division of Food Science, Nutrition and Exercise at the university. According to her, kale is a nutrient-rich vegetable that contains carotenoids, including lutein, α-carotene and β-carotene, which have beneficial effects for health.

The problem identified by the scientists is that the human body has difficulty absorbing these nutrients because they are fat-soluble rather than water-soluble. Therefore, the researchers began investigating whether cooking kale or adding specially developed sauces and seasonings could facilitate the absorption of carotenoids.

These nutrients, together with vitamins C and E and other plant compounds present in kale, have been associated with a number of health benefits.

Poor air quality revealed in Northern schools

A study by the "Respirar Fundo" project, co-funded by the European Union, analyzed air quality in 13 schools across the country, including three in Northern Portugal (EB de Manhente in Barcelos, EB de Freixo in Ponte de Lima, and EB 2/3 Pevidém and EB Gil Vicente in Guimarães), revealing that atmospheric pollutants measured at the entrance to these schools exceed future legal limits. The monitoring, conducted by the Environmental and Sustainability Research Centre, found that in nine of the 12 schools analyzed, concentrations of PM2.5 and NO₂ would exceed the stricter limit values of European Directive 2024/2881, which comes into force in 2030. The problem is worsened by road traffic, with peaks during rush hours. The project will now expand with "Respirar+Fundo", covering more schools and regions.
