The Signatures restaurant will hold next Tuesday a pairing dinner dedicated to Brazilian artisanal cheese, titled "Queijos com Prosa". The event will feature a six-course tasting menu, prepared by chefs Yann Kamps, Mbark Guerfi and Phillipe Brye, with pairing conducted by sommelier Elaine Oliveira.
The dinner is a partnership with the Queijo com Prosa project, under the curation of Daniel Martins. Each dish was designed around a specific Brazilian cheese, sourced from small producers from regions such as Serra da Canastra and the interior of Rio de Janeiro state, in a gastronomic route that combines French technique with reinterpretations of national classics.
Among the dishes on the menu is the crispy polvilho biscuit with melted cheese cream made with Canastra cheese, paired with Domínio de Punctum 99 Rosas Chardonnay Viognier Special Edition 2024 wine. Another appetizer is the Vale do Testo tartelette with fig compote, made with washed-rind cheese.
