Menandro Rodrigues, executive chef of the restaurants Haru, Umai and 111 Music Bar, will debut in the pastry area with Nagori, a new confectionery that will be opened in Ipanema, in the south zone of Rio de Janeiro. The forecast is that the pastry shop will be inaugurated in approximately three months.
The establishment will follow the Yogashi style, which consists of Western pastry reinterpreted under Japanese influence. The chef revealed to Rio Show that his visits to Japan served as inspiration for several ideas, including this confectionery. The style is already present in Tokyo and São Paulo, and will now arrive on Rua Teixeira de Mello.
From mainly European influences, Japan developed a more delicate, balanced and less sweet pastry, which respects the seasonality of ingredients and enhances them in its preparation.
