Drought forced France to change the rules of its most famous cheeses

France has temporarily relaxed the production rules for some of its best-known cheeses, such as Abondance, Beaufort, and Comté, due to severe drought that has drastically reduced the availability of pastures and forage for dairy herds. The regulatory acts published on Wednesday introduce temporary changes to the specifications of these cheeses from the mountainous regions of the east of the country, with the measures having been approved by the National Institute of Origin and Quality (INAO), the body responsible for managing official quality and origin identification systems.
