SP Gastronomia is a festival that brings together restaurants, producers and musical attractions at Villa-Lobos Park, in the West Zone of São Paulo. Among the participants is Camélia Odòdó, a 100% vegan restaurant that bets on the valorization of Brazilian ingredients and references from Afro-Brazilian cuisine.
For the festival, the restaurant brought four menu options. Among them are the traditional jackfruit coxinha, a taco with agroecological corn tortilla, smoked tofu salad and sautéed mushrooms, prepared during the event's programming. According to chef Maurício Pinkusfeld, the selection sought to offer "a little bit of everything we serve at Camélia, or have served, things that work very well at a festival".
One of the options presented is the sautéed mushrooms dish, which features eryngii, portobello and shiitake mushrooms, as well as green tomato, ginger and red onion. The dish is finished with a sauce based on reduction.
