Kitchen Congress 2026: Madeira and Morocco in the spotlight in Oeiras

The Kitchen Congress returns on September 27 and 28 to the Marquês de Pombal Gardens in Oeiras for its 22nd edition. With the central theme "The Sea," the event has chosen Madeira as the Guest Region and Morocco as the Guest Country, bringing together over 80 national and international speakers to discuss sustainability, territory and culinary innovation.

This year's edition reinforces the valorization of territorial identity and multicultural dialogue, transforming the Marquês de Pombal Gardens into the epicenter of professional culinary debate. The program will explore areas such as maritime charcuterie, fish maturation, sustainability in fish selection, the demystification of aquaculture, seasonality and the influence of maritime products on inland cuisine.

The expert panel features international references such as Aitor Arregi, Iñigo Lavado, Pepe Solla and Rodolfo Vilar, as well as renowned Portuguese chefs such as Marlene Vieira, Nuno Mendes, Rui Silvestre and Vítor Matos. The scientific and institutional dimension will be represented by researchers from the Portuguese Institute for the Sea and Atmosphere (IPMA), the Champalimaud Foundation and Ethic Ocean.

In the days leading up to the official opening, two exclusive dinners will be held in Lisbon. On September 25, Marlene Vieira hosts Lahcen Hafid for a dinner dedicated to the gastronomic connection between Portugal and Morocco. On September 26, João Sá welcomes Brazilian Rodolfo Vilar, from the A.Mar Project, at the Sála restaurant.

O Congresso de Cozinha regressa a 27 e 28 de setembro aos Jardins do Marquês de Pombal, em Oeiras, tendo a Madeira como Região Convidada e Marrocos como País Convidado na sua 22.ª edição. Sob o tema central “O Mar”, o maior encontro nacional de profissionais do setor reúne mais de 80 oradores nacionais e internacionais para debater sustentabilidade, território e inovação gastronómica.

A 22.ª edição do Congresso de Cozinha reforça a valorização territorial e o diálogo multicultural ao eleger a Madeira e Marrocos como protagonistas. O evento anual transforma os Jardins do Marquês de Pombal no epicentro do debate culinário profissional, acolhendo demonstrações, palestras e experiências imersivas focadas no futuro da alimentação e nas heranças gastronómicas.

O tema “O Mar” serve de ponto de partida para discutir a ligação entre gastronomia, conservação marinha e sustentabilidade.

Ao longo do evento, o programa vai explorar áreas como a charcutaria marítima, a maturação do peixe, a sustentabilidade na escolha do pescado, a desmistificação da aquacultura, a sazonalidade e a influência dos produtos marítimos na cozinha do interior. O contingente marroquino terá como figura de destaque o chefe Lahcen Hafid, com vasta experiência em França e passagem pelo Ritz Paris, que conduzirá uma masterclass sobre a gastronomia do seu país. Por sua vez, a delegação madeirense integrará nomes como Octávio Freitas, Júlio Pereira, Celestino Grave, Diogo Freitas, Roberto Barros, Miguel Gonçalves, Rafaela Antunes, Joana Abreu Gonçalves e Zélia Santos.

O painel de especialistas conta ainda com referências internacionais como Aitor Arregi, Iñigo Lavado, Pepe Solla e Rodolfo Vilar, a par de conceituados chefes portugueses como Marlene Vieira, Nuno Mendes, Rui Silvestre, Vítor Matos, Gil Fernandes, Paulo Morais, Francisco Quintas, Rodrigo Castelo e Louise Bourrat. O debate estende-se igualmente à vertente científica e institucional, com intervenções de investigadores do Instituto Português do Mar e da Atmosfera (IPMA), da Fundação Champalimaud e de entidades como a Ethic Ocean.

Nos dias que antecedem a abertura oficial, realizam-se dois jantares exclusivos em Lisboa. No dia 25 de setembro, a chefe Marlene Vieira recebe Lahcen Hafid no restaurante Marlene para um jantar a quatro mãos dedicado à ligação gastronómica entre Portugal e Marrocos, com reservas através do número 912 626 761. No dia 26 de setembro, o chefe João Sá acolhe o brasileiro Rodolfo Vilar, do Projeto A.Mar, no restaurante Sála, numa refeição comemorativa inspirada no tema do mar
