This restaurant in the Algarve has just opened under the command of a chef who has worked with Jamie Oliver and you can eat there for €18

The Ciro restaurant opened on August 5th in Guia, in the municipality of Albufeira, in the Algarve. This is a project by the Vila Vita Parc group, which already has 14 restaurants, this being the fifth outside the Alporchinhos resort. The space operates with a fire-based kitchen, using a parrilla with height-adjustable grills and a wood-fired oven, where charcoal and wood are used.

The kitchen is in the hands of Francisco Barbosa, a 40-year-old chef from Lisbon who has worked in restaurants in Lisbon and London. For six years he was part of Jamie Oliver's group and worked for about two years with Portuguese chef Leandro Carreira at Londrino. He returned to Portugal in 2019, having worked at Taberna do Calhau and Musa, before accepting the invitation from Vila Vita Parc for this new project.

The menu has Mediterranean inspiration and follows a rule established by the team: each dish must include at least one element that is grilled, roasted, charred or smoked. The offering includes starters such as sea bream crudo, cured mackerel and tiger prawns, and among the main courses there are daily fish, grilled squid, Iberian pork and bull skewer. The restaurant also maintains a reference to local tradition with the Frango à Ciro, which costs 18 euros and is prepared with half a deboned chicken, malagueta olive oil, watercress, coriander tzatziki and yoghurt bread.

Ciro has a capacity for 120 people, distributed across two rooms, two bars, a terrace and two patios. It is open for lunch from 12:30 to 17:00 and for dinner from 18:00 to 22:30.

Na Guia, conhecida pela concentração de restaurantes dedicados ao frango assado, há agora um novo espaço que leva a cozinha ao fogo de uma forma mais abrangente. O Ciro abriu a 5 de agosto, no concelho de Albufeira, com uma carta de inspiração mediterrânica onde peixe, marisco, carne e legumes passam pela grelha, pelo forno ou pelo fumo.

Segundo o portal NiT, o projeto pertence ao Vila Vita Parc e representa o 14.º restaurante do grupo e o quinto fora do resort de Alporchinhos. A cozinha está entregue a Francisco Barbosa, chef lisboeta de 40 anos que passou por restaurantes em Lisboa e Londres e integrou durante seis anos o grupo de Jamie Oliver.

Um chef entre Lisboa e Londres

Francisco Barbosa teve os primeiros contactos com a restauração através da mãe, que tinha um restaurante. Começou a trabalhar profissionalmente na cozinha por volta dos 20 anos e acabaria por rumar a Londres, onde também trabalhou cerca de dois anos com o chef português Leandro Carreira, no Londrino. Regressou a Portugal em 2019, passando por projetos como a Taberna do Calhau e a Musa, antes de aceitar o convite do Vila Vita para avançar com o Ciro.

A grelha é o ponto de partida do restaurante. A cozinha dispõe de uma parrilla com grelhas de altura regulável, além de um forno a lenha, sendo utilizados tanto carvão como lenha. “Tudo iria girar à volta de uma parrilla que tem algumas particularidades”, explicou Francisco Barbosa à mesma fonte, referindo que o equipamento permite trabalhar diferentes técnicas.

Carta onde o fogo aparece em quase tudo

A equipa estabeleceu uma regra para a carta: cada prato deve ter pelo menos um elemento que tenha passado pelo fogo, seja grelhado, assado, marcado ou fumado. A proposta não se limita à carne, incluindo produtos do mar e opções de vegetais. Sempre que possível, são utilizados produtos algarvios, embora também haja ingredientes provenientes de outras regiões portuguesas.

Entre as entradas encontram-se sargo em crudo, cavala curada e camarão-tigre, enquanto nos pratos principais surgem peixe do dia, lula grelhada, porco ibérico e espetada de novilho. Há ainda beringela com tahini e sumac e vários acompanhamentos de vegetais. “Somos muito mais do que isso. Criámos pratos de assinatura com os quais nos identificamos”, afirmou o chef à mesma publicação.

Do frango da Guia ao tomahawk

O restaurante não deixou de incluir uma referência direta à tradição gastronómica da zona. O Frango à Ciro custa 18 euros e é preparado com meio frango desossado, azeite de malagueta da casa, agrião, tzatziki de coentros e pão de iogurte. Para quem procura outras opções, o peixe do dia custa 28 euros, ou 48 euros para duas pessoas, enquanto a lula grelhada fica por 26 euros e o porco ibérico por 24 euros.

A carta inclui ainda uma espetada de novilho com guanciale, harissa, chimichurri e batata frita, por 32 euros, e um tomahawk para partilhar, servido com molho da casa e batatas fritas, por 90 euros. Nos acompanhamentos há, entre outras opções, cenouras biológicas, couve-flor gratinada e arroz mediterrânico.

Espaço para além da refeição

O Ciro tem capacidade para 120 pessoas, distribuídas por duas salas, dois bares, um terraço e dois pátios. O restaurante funciona ao almoço, entre as 12:30 h e as 17 h, e ao jantar, das 18 h às 22:30 h.

A abertura marca também o regresso de Francisco Barbosa ao Algarve depois de um percurso dividido entre Lisboa e Londres. No novo projeto, o chef assume uma cozinha construída em torno do fogo, mas com uma carta que procura abranger diferentes produtos e preparações. “No fundo, tudo gira à volta do fumo e do fogo”, resumiu à NiT.
